i want to change dashboards from unleashx to xbmc if i do will i have to load all my games & emulators back onto the xbox hard drive?

No, just ftp xmbc to your applications folder and launch it from unleashx. Then just use xmbc emulator launcher to launch your emulators.

unleash will launch emulators.. through the "applications", "emulators" or file manager menu.. depending on how you have set it's config file for paths.
