I know its possible if you get solder 2 2.5mm jacks onto a 3.5 or something like that. But is there an easier way to do it and also be able to use the mic at the same time?
I haven't heard of anyone taking a PC mic and using it with the 360. They might have a converter cable, that plugs into 2.5 mm and lets you use like 3.5 mm. You could probably find something like that at RadioShack. But again, I don't know if the mic would really work...

i couldnt get any cellphone headsets to work with mine. but i have been using the old xbox 1 headsets just fine but no volume like you said. i use the old school halo 2 headset and the original xbox headset
There are several options to use your PC headset on your XBOX.
If you want to use it like an XBOX Live chat-only headset, like the one-ear ones, you can get a headset buddy or an intec/datel. They are chat only so you'll get chat through your headset and game sounds through your speakers, which means your ears will be covered.
A better solution is to use your PC headset like an XBOX gaming headset, with chat and game audio both through the same source, most likely your headphones. You can do this with something called XJacker. They have kits for all types of audio setups, and have a really good and cheap mixamp so you can have a powered, boosted headset like the more expensive Turtle Beach, Astro, and Trittons.
