Ok, so I'm contemplating flashing my xbox 360 and playing backups of my games. I have no intentions of using the xbox online at the present time so I don't think the stealth patching is too important to me right now. I just need some advice on the best way to create back ups of my original games.

I have a dual layer dvd recorder, So can I use this to rip the game to my hard drive and then burn the iso? Or Would I need to connect the xbox's dvd drive directlty to my pc and rip it that way? I have looked through different tutorials and there are so many different ways of doing things I'm quite confused as to where to start, I have seen a way of doing it through "WXripper" not sure of any other software that I can use in a similar way. Anyway, any advice would be greatly appreciated. Thanks

Very good idea.

Online/offline regardless, you will need to check your ISOs with abgx360, which will stealth patch the ISO anyway.

Ripping retail discs, using Xbox Backup Creator 2.9.

To rip: You would need an Xbox360 drive that is flashed with 0800v3 firmware. (Use Xbox Backup Creator)
To burn: You would need an iHAS series burner flashed with BurnerMAX firmware. (Use ImgBurn or CloneCD)
iHAS burners:
Lite-On iHAS124B
Lite-On iHAS224B
Lite-On iHAS324B
Lite-On iHAS424B
Lite-On iHAS524B
Lite-On iHAS624B

Stay away from WXripper.

Instead of the Xbox 360 drive flashed with 0800 firmware you can also use a DROM6316, they are almost the same as Xbox 360 BenQ drives, you just don't need an external power source anymore, but you'd have to modify the drive according to this guide:
http://www.xbox360iso.com/drom6316-pc-internal-t496730.html
The drives are hard to get though, because they were only used as some Dell OEM drives.

Xbox 360: Slim untouched with a faked 320 GB harddrive for XBL, phat with LT 3.0, played Halo early, so going on live would be an instand ban, also with a faked 320 GB harddrive
PS3: Untouched 160 GB Slim, 60 GB Fat with latest Rogero and 160 GB internal harddrive.
PSVita: hardly ever play it
GameCube: Black with a Viper chip installed. With gameboy player. Trying to get a Wavebird controller.

I found a site that sells the DROM6316 for 35 bucks, just needs to be modified according to the guide.

You can use any DL burner, but to get proper burns, and alleviate headaches/problems get an iHAS. 20 bucks.
