Best Method for Ripping Blu-Rays to 720P?

I want to stream some of my Blu-Rays to my PS3. I've determined 1080P resolution is overkill for my needs (just creates unnecessarily large files and bandwidth/CPU demands) - I fine with 720p resolution as a good compromise with good image quality. I just want to rip the main movie. My PS3 is connected to my receiver via HDMI which supports True HD / DTS HD audio.

What is the best format to rip to and best/simplest method to do it? Should I just use AnyDVD HD to decrypt transparently and use something like RipBot264 to rip and transcode the largest m2ts file to and MKV file with 720p resolution and a cRF of what, 18 to have no significant loss of video quality? I'm a bit unclear on what audio streams PS3MediaServer and the PS3 can handle via MKV? Can I just pass-thru or will I need to transcode to AC3 like I've discovered I've had to do when ripping DVDs to mp4 files? I haven't been able to get DTS soundtracks to stream, but I'm not sure if I'm forgetting something or it is just impossible.
