Hey guys quick question I want to shoot at you:

If I jailbreak, screw around with it offline for like, a day, then delete all my jailbreak homebrew files and upgrade my firmware back to the latest, do you think Sony will drop the banhammer on my PS3?

Oh, one more question:

Can I run backups if I jailbreak my PS3 using my iPhone 2G? The Backup-Loader works with that, right?

You can't login to the PSN while you are jailbroken, and you cannot get banned from PSN if you have not logged in. Otherwise, anyone with a jailbreak could start entering psn names without passwords to get the entire sony staff banned.
