I would like to know if when you softnmod and run the downgrade ios35 if you are actualy downgrading the firmware of your console? I guess one of my concerns is if Nintendo ever figures out a way through updates to render the console bricked, is there a way to unbrick or flash back to original?

Does the homebrew channel still issue safe updates when nitendo issues an update?

Yup, Install BootMii and make a NAND backup. So if you brick your Wii or whatever you can always convert it back when you first made your NAND backup.
