iTunes removal of updated version

I recently downloaded an updated version of iTunes which i HATE. I tried a system restore to go back to the previous version. It would not let me open my iTunes and said some of your files may be missing and I needed to reinstall iTunes. I did but was still unable to get to my library. I had to do another system restore to bring me back to the version I hate. How can I safely remove this version and go back to one I want? I have over 13,000+ songs which I don't want to lose.
