Alright. So, it's taken me a while to get where I am in the game.
I'm at the space station, and I'm following Rinoa...or, I'm trying to. See, I get to that hallway - where the monster/moon cutscene is? - and...it just stops. The background music keeps going, while the game taunts me with being frozen.
I've tried everything.
Any ideas?

Oh, I remember - I had this problem! Well, I think I did what KajNrig suggested - only, I took it out once it had crashed, cleaned it and put it back in, then it started again. Wait, are you playing this on your ps1 or 2? The last time I played it, it was on my...ps1...? my ps2 doesnt like the majority of my ps1 games, so I normally end up using the ps1. (Despite its always making really loud and scary sounds >.>; ) If you've got a Psone, coming from personal experience, I'd use that. Srsly, it works better than my ps2 O.o Well, it might not, but try it (Unless you already have... )
If after all that KajNrig suggests it just doesnt work, um...get another copy of FF8? Eheh... ^^; (I remember I bought mine for £20... *sigh* )
i had the same problem but i wasn't using an original disk.i went to my local game shop and hired the game just to get past that part.when i got that game it was about 2 weeks before the australian lauch of it would of been back in 1999 i think and i played it when i had my ps1.

Typically, the playstation 2 after a long time (Fat Version mostly) has difficulties properly running a PSone game due to the LENs going out of allignment, as KajNrig mentioned.
This is an easy fix which just requires you to take the casing off and get a small philips screw driver, and tightening or looseing a little screw. I won't get into details on it cause I never had to do it I just bought a thin when mine started acting up.
Ah, afterwards it's recommened to carefully clean the lens using a proper cleaning method, no water it'll wreck it more.

Yes that'll work, lightly clean it tho don't put much pressure on it, just enough to push the lens down a little LITTLE bit, and make sure you get rid of all the extra chemical on it using a dry static resistant cloth... or just any cloth that is soft and wont leave things on it.
