Getting Rid of Audio Tracks in .VOB?

So I'm trying to back up my DVD collection. What I have been doing is ripping the DVD with DVDFab and then joining the individual .vob files with JoinVobFiles. The problem with a few is that the joined .vob files will have a non-English audio track as the default track. I tried using Mkvmerge to cut the audio tracks that weren't English, but the resulting movie file as a smaller aspect ration (I can't seem to edit these settings with Mkvmerge while using a .vob).
Are there any other programs that I can use to nix audio tracks without changing the video quality, or is there any other way to change the default audio track? I heard that I may need to demux/reauthor, but for a newbie like me, I couldn't find a step by step guide. I don't know a lot about this, so if there are any good simple tutorials, that would be good.

I use DVDFab HD Decrypter to simply select the main movie and 'English'.

Can I do this with a .vob file? It seems I may be able to with the DVD Ripper option, but I don't want to lose any quality. How can I set my conversion settings for this?

What you are saying is that you have a single, large .VOB file?

Exactly. Some of them are .vob files I joined together form the separate ones I pulled from the disk.

It's best to select the audio when the DVD is being ripped.
When you merge the VOB files you lose the handy information contained in the IFO files.

Download and run AviDemux
Open or drag the .vob video file onto the window.
Set the left window options as shown.
Select the audio track (Audio > Select track).
Generally (not always) English is the first track - but since you no longer have the labels, it's not certain.
Select only the first audio and use the seek bar and the A/B buttons to select a tiny clip.
Click File > Save.
Don't close AviDemux.
Play the saved clip to be sure that it's the languge you want.
If it's ok, click Edit > Reset edit and save the entire video.
