clonedvd 2 from elby is very easy to use and even though i use this a lot, lately i have found shrink to be very versatile.However there are other programs that do very good quality but are at the higher end of dvd production.
Maybe do some research on dvd architect before you buy.Below is a rough idea of what it covers.

as to your other question concerning quick rip times i found that even though i upped my ram from 512 to 1024 it only cut the time by about 7 mins which is not much considering it takes about 25mins when you burn disc to hard drive to disc and about 10-15 mins from hard drive to disc
