I have read all 17 pages of the current topics and subjects that members have posted, and some answered, not forgetting you dRD, you are a great asset to everyone here!
However, I was unable to find out the solution to my question: "How am I able to specificially find out which Audio/Language track is the one which I desire to rip from my DVD to VCD?"

Exact answer if you are using SmartRipper -- new versions of SmartRipper create a text file into same directory where it rips the VOBs, IFOs, etc.. Open that text file and it should show you the stream order in the movie, like this:
Stream[001] X=[[0xE0] Video PAL 720x576] [] [] [] []
Stream[002] X=[[0x80] Audio English AC3(2Ch) 48kHz ] [] [] [] []
..etc...
(Monsters Inc. trailer :-) Anyway, the order for audio tracks in AVI.cfm" class="forum_link" target="_blank">DVD2AVI is the same as it is in this list. So, if you prefer to have Japanese audio and your AC3 Japanese Audio track is third audio stream (don't count subtitle or video streams) in the list, it is the third track in the DVD2AVI's settings as well.
Nah, too much free time during days as I'm not-so-happily unemployed from "RL job" and trying to find developer positions in London, which seems to be impossible (hint! if you're a CTO of UK-based tech company who's reading this, mail me ;-).
Anyway, hopefully that helps you -- another option is to use DVD Decrypter and rip the VOBs without the unnecessary audio streams, which leaves you just the track you want to use (and saves your HDD space a little bit as well when you don't need to rip useless Mongolian AC3 audio tracks).
