AC3 5.1-ch English is the only one you ever need. and if its not there, then use the top AC3 2-ch English one.

One thing you should be careful with is i have noticed that sometimes DVD Shrink will show more then one English audio file such as 5.1 or 2.0 but if you look you will see that the 5.1 is 0mb meaning they is nothing there.
I have only seen this on extras but it is easy to overlook and when you burn it you will end up with extras with no sound.
As for what to keep i recommend 5.1 but if you dont have 5.1 and wish to save some space you could opt for one of the others.
But i also suggest you author to HD as at least you can then check to make sure everything works as it should.

1. dts is twice as big as dolby
2. if you don't have a dts reciever and player, you won't hear any sound if thats all you keep.

Sorry ILoveAD
What i mean is so that the files are authored to your Hard Drive first as opposed to going straight to your DVD Burner so you dont waste a disc if anything goes wrong.
Hope that makes more sense?
