AfterDawn has a very good download for ripping DVDs and encoding them to a couple of formats:

The download includes the needed software and a basic tutorial.

Note that this does not cover backing up DVDs to DVD-R. I'm sure it's not an enormous difference from the process of creating DVD backups on a PC, but opinions probably vary as to the easiest and best way of doing it. If someone could please enlighten me with a tutorial on creating backups of single and dual-layer DVDs on a Mac, I would be one happy camper.
