Help a newbie out with encoding and DVD creation

I used Virtual Dub to join the two .AVI files I have for the movie I want to burn to DVD. However, it doesn't just join them without having to choose a video compression format. Why would I want to do that if I'm just going to go and use that other TMNPEG program (forgive me for the spelling) to endode it into MPEG 2?

Secondly, the two files originally are 699 megs and 814 megs respectively. When joined they go over 1.4 gigs, yet when I try to burn them with my MyDVD burning software it says that it exceeds the 4.7 gig DVD limit I have on the DVD's I use. What gives?

Lastly, is there anyways possible to keep the picture quality that the AVI's have? When I selected the DIVX Mpeg-4 compression in Virtual Dub, the picture came out ok, but nowhere near as crisp as those original files.
