I?m posting this here because I use DVDshrink for most of my DVD Backup. But anyone how can you backup a DVD-R? I have heard that you can't, but that seems very odd.

Rip it with shrink and burn it with Nero.

There is no problem of making a copy of a copy. You can use even Nero6 or a regular program if the disk in not encrypted.
