freezing during transcode using NVE

I have been trying to burn 2 .avi movies to DVD and usually the first movie will transcode fine and then everything hangs up on the second. I have also found it very tough to add chapters to movies, but have no problem adding chapters to a MST3K episode. Seems the higher the quality, the more likely NVE is to freeze up adding chapters. Anyway, this is pretty frustrating. I have a 1.2 Gig Athlon with 256 MB Ram. What the heck should I do?
