Audio format confusion converting MOV files to DVD

I'm trying to convert some copy protected QuickTime files out to DVD.
The .mov conversion apps lose the audio, because of the copy protection, so I extracted the audio separately into Linear PCM wav files. I'm using the latest DVD Author, and specifying each .m2v and .wav pair.

The problem that I'm having is my Toshiba DVD player defaults to 'bitstream' audio and has no sound during playback. If I go into the DVD player audio setup and change to Analog or PCM, the audio plays fine.

How can I change the .wav files to an audio format that'll play by default? I've tried using BeSweet to convert to .ac3 files, but DVD Author says that the .ac3 files aren't compatible. Do I need some special settings or is there another app that I need to use?
