Digitize old films, slides on a Mac? Best system?

I've just inherited a pile of old films (super-8, and 16mm sound), as well as family slides, documents, etc. And with it came a fair sum of money, so that I should have the resources to digitize the assets, and share them with the family.

Although I'm the family "Mac expert", having started with the 128K Mac in 1984, this new opportunity is a bit out of my league. Could you please give me suggestions for what gear i should purchase (hardware and software), and/or procedures I should follow, in order to produce Hi-Definition DVDs from the source material.

A G5 DP is not out of the question (although I am loping along with a pair of G4 Cubes these last few years). I'm not averse to a hardware encoder like the Optibase Moviemaker 200S Pro -- as well as Apple's FCPro HD and DVDPro HD.

But which Hard disks, for example? And where should I look for the most effective workflow? I'm happy to immerse myself in a learning curve of several months, as long as the final product (DVDs) is "Hollywood"-quality.
