The original files were over 7GB and were encoded to fit on a DVD-5 using Rebuilder.

DVD-RB should've handled them with ease...what did the result look like when viewed on the TV?

Just viewed on my computer monitor, they looked fine. I just had a look at them, using Showtime as the player. Not sure if you've used this program, but you can use the mouse button (on top) to cue through material. I noticed that if I cue quickly thru the DVD that it goes back to near the start, the same number each time if it happens again.

Is this familiar to you ?

I've used Showtime before, but don't typically watch movies on the PC so I haven't seen the issues you are having.
