Each time I split a movie into 2 DVDs I end up with the menus only being on the first DVD. Also the only way to split the Movie into two DVDs is to copy the entire disc. Is there a way to just split the main movie and leave all the other stuff out?

You can download the trial version of Clone DVD and split a movie keeping menus on both disks.
