Understanding ultimate file size when building DVDs

Hello chaps.

Been checking out your forum, and I like a lot of what I see.

Thought I would share my recent workflow and some interesting situations with Adobe Audition. First let me share my process

VHS > Canopus ADCV110 > Firewire > Sony Vegas Capture 5

Edited and Rendered using Vegas 5 into PAL streams: (m2v and mpa)

1x 41m file 1.81 GB (video portion)
1x 67MB Audio portion

and

1x 43m file 1.901 GB (video) and
1x 71MB file audio portion

I have experimented with DVD-Lab, but I am somewhat frustrated by it's limitations. This morning I experimented with Adobe Audition. It appears to have encoded these two file "groups" to 2.39 and 2.51 GB respectively. What I am not sure I understand is how this figure is reached, and what factors influence it. Clearly it has to do with transcoding, but I am unclear as to why the transcoding process should INCREASE the filesize...

DO you have transcoding tips? Where can I locate an idiots guide to transcoding?
