VHS-to-DVD: What's the trick to dropping file size?

Ok, I'm new at this, but I have the DVD burner and the TV in card - and I can bring in video and audio from my VHS - but I'm concerned about the quality. I have a old documentary series I really want to keep (no longer available) but want the quality as high as possible - at least as good as the original.

When I jacked up the screen size, audio sampling, etc - I was recording about 24GB (in AVI format) for about 30 minutes of video - which won't work (I'm assuming that I'm limited to 4.7GB per disk, right?).

So, I've switched over to (don't laugh) MyDVD to capture it - with it's simplified Good/Better/Best - and got it down to about 2.8GB MPEG for about 40 minutes of video - but the screen size is smaller, etc and I'm concerned about quality (I've not yet looked at burned output on a television, so I'm still in the dark...).

So - my questions are this:

1- What is the ~normal~ screen size I should be shooting for - what is generally accepted as 'reasonable' for a screen size (what is/was the screen size for the original VHS tape)?

2- What format is the best one for broadest acceptance by DVD players (I'm assuming MPEG1, from what I've been reading here).

3- What are my choices about improving image quality while pushing down the file size and finally -

4- Am I going to be limited to 3.7GB per disk, or is there stuff about compression, etc that still I don't know about? How in the hell do the movie companies do it (get more than an hour to a single DVD?)????
