How can I rip a "specific" video off a DVD and have it ready to burn onto another?

Well, I made this film a few weeks ago, but now I need to rip the video footage off the DVD to place onto another. The tricky part is, I don't want to copy the "entire" dvd, because I only need "one" video off it. (and there are 4 in total).
I would like a method of ripping the video off the DVD and having it in the correct format to burn onto a new DVD useing my DVD Authoring software. Normally I'd convert the video from .AVI to the DVD Standard format using Tmpeng Xpress 3, then I'd import the DVD Standard video files into my DVD Authoring software and it would burn em for me. I hope there's a way of doing this without having to re-encode the video footage, since I don't want to lose any quality.

Would I lose quality if I,
ripped the video off the DVD...converted it to Uncompressed AVI...then re-encoded it using the same profile in Tmpeng Xpress 3? I just have a feeling it might lose some quality, but I'm not sure.

I believe the DVD Standard I'm talking about was a special Mpeg format.

If the video you want is already in DVD format then there isn't any need for re-encoding, converting to AVI etc.

DVDShrink can select out the specific part of the DVD you need. Use the Reauthor option and see if the one video you want shows up as a separate title. If so you can drag it to the window on the left and burn it.

If not you can use the Start/Stop feature of Shrink to select exactly the portion of the video you want to burn. Select Reauthor, drag Title1 from the right window into the left DVD structure window, click on the blue arrows pointing left and right then select your start and stop points. This will create a set of DVD compliant files from your selection which you can then burn.

I wanted to rip a certain piece, then place it into a new DVD I'm creating with other videos and a new menu. Would that be possible?

Well, the menu thing adds a twist. If you want to burn multiple video files to one DVD and create a custom menu then you'll definitely need more than DVD Shrink. It's very easy to add different DVD titles to one DVD without menus with Shrink alone. This guide will show you how to add different titles to create one dvd:

You could also use this guide to create a single dvd from 2 different dvd's just using Shrink.

But, to add menu's to a DVD compiled from multiple sources without re-encoding is more involved.
