I have a Pentium 4 2.4GHz and normally converting videos isn't too bad for me. After the announcement of the iPod with video, I have been looking into converting some video for the soon coming iPod which is about 700kbps .m4v h.264 with 128kbps AAC audio. Only program I've gotten so far that can do it well is Quicktime Pro 7, only problem is that it goes so slow! It takes about 40+ mins to convert like a 4 minute video. It dosnt bog down my computer too much though... I can play lots of other videos pretty good while converting, but why is it taking so long? I got Adobe Premiere Pro 1.5 to convert to h.264 not as slow, but i couldn't get it to have the AAC audio. any ideas for a good fast converting?

H.274 takes a long time to encode. That's the price you pay for increased compression. I've been converting movies since Wednesday.

What I do is use HandBrake (google it) and start it before going to bed.

use a program called PSP Video 9. Itl work if you dont have a PSP. Just set the stats right, and it converts fast! On my comp it converts at 1:1 if not slightly faster to superb qual h.264 video for ipod!

You aren't actually considering buying a video ipod???
You could try meGUI which uses x264 for encoding. Should be faster and it supports AAC. You will get mp4 files though which is the correct extension. m4v is for raw MPEG-4 part 2 streams. I don't know what apple were thinking.
