I recently bought the Breaker Pro CD, which allows me to play burnt PSX games on my PS2 with a slide card. And although it works just fine, I come across a problem with games that require the disc to be changed at some point in the game (games like Final Fantasy 7, Final Fantasy 8, and Star Ocean.) is there any way I can bypass this problem?

Well all those games you mention allow you to save at the end of the disc. As long as you can save between discs, you're fine. If not, well you're SOL.
