There are tons of tutorials in these forums and on the web:
http://xboxscene.com/tutorials.php?p=191|211|#211

But to make it simple, get evox, slayer installer
swap out you old hdd (save it!!!! you never know when you might need it again) put the new one in, right from the box nothing needs to be done. then put a copy of the slayer installer disc in. the system will boot from the disc(make sure the disk works by trying to run it on your xbox before you take everything apart)then just following the easy instructions on installing a new HDD. from there it will let you decide how you want it to be installed. you'll be up in running in about 10 mins.

there is a great step by step tutorial for how to
put in a new HDD here
http://www.teammodders.com/viewforum.php?f=45
and Slayer 2.6 is a great program to use to format and reinstall
everthing
But like above, make a back up on your PC of the original
HDD just in case.
This is the tutorial a friend wrote for me when he made me my
premodded Xbox because that was the very first thing i did.
Yank out the wimpy HDD and installed a 300GB Western Digital
one in it.

check the compatibility chart
http://xboxdrives.x-pec.com/
but i think most standard PC hard drives will work.
Just make sure you follow the Slayer guide on how to
format it correctly and install all the stuff back on. An check
to see if you need to have a modded xbox to use Slayer, a
bigger HDD, or anything like that before you rip open your
system.
