Try using a combo of AnyDVD, free 21 day trial to remove encryption and DVD Shrink and see how you go.

I cant help you with this one as I haven't tried to back it up, however I dont think it poses too much a problem with others, try looking through other threads for the answer.

@mus5892, Is this a download file you are trying to burn or is it off an original dvd?? Off a regular dvd you should get an AUDIO_TS and VIDEO_TS folder with the audio folder actually being empty. If this is a download it probably needs converted to proper dvd format before burning.
You can also try running Anydvd with Nero Recode to do the process.

Recode has been in there since Nero Ultra 6 came out. That jacket_ts file is something I have never seen. Sounds like the dvd is set up different which may be why you are having the problem. I'll try and do some research on it.

Here are some things I have read about. I haven't tried this movie so this is just from info found on different sites. That jacket_p file has something to do with a thumbnail view of the dvd which I think isn't really necessary for the movie to work. At least thats what I have read.
Second, if this movie has the RIPGUARD protection, which I'm guessing it does, that may be the second problem. From reading other sites, even using AnyDVD as the decrypting agent, in many cases the file structure is messed up enough that many programs won't work. The suggestion was to use the newest AnyDVD along with CloneDVD 2 to get the ripguard movies to work. It seems programs like Decrypter and Shrink working with AnyDVD are not good enough anymore for the new ripguard encryptions. Like I said this is all from other info not from direct experience. If you don't have CloneDVD 2, there is a 21 day trial download of the full program to try it out. Hope this helps.

Will the original play OK?? There have been cases of defective NEW originals that will play OK on a player but when trying to rip that same dvd the defects show up and it won't rip. This could be the case with your dvd. Any chance of exchanging it or getting another copy from a friend? Its starting to look like this may be the problem.
