Before I spend money on a new DV camera

My set up now is a old Canon digital V camera, via a S-video and audio to a WinTV PVR 250 capture card to Video Re-Do for edditing and creation of clips. It all works great.

I am now looking at several new mid range cameras
(MiniDV and trying to stay with Canon) and looks like very few of them have a S-video hook up. So, I am told to use fire wire, in which case I am not able to use my PVR 250 which is fast and has on board encoder or to use RCA video hook up in which case I will be able to use my PVR but I think I will loose video quality.
Am I missing something here?
Using fire wire, what app do I use to capture, without taking forever to encode. Is that possible?
