Why deinterlace?

I am wondering why I should bother deinterlacing. Wouldn't it be easier to set the same frame order on the target and source and create an interlaced stream as the final result?
Many guides instruct you to select "progressive" as the video source, is this because progressive video is more acceptable to standalones....?
This is an especially important question for me because I am converting from PAL to NTSC with Canopus Procoder (these DVDs are not availablek outsid eof PAL-land), and there is no way I can use the VOBs without re-encoding them.
