How can an 85-90 minute movie be over 5 gigs after you use SmartRipper and then IfoEdit to reduce it? I've noticed this is mostly on the newer dvd's released. Playing the vob's it seems legit in size for the movie. Any ideas?

Easily, MPEG-2 video on DVD-Video disc can have bitrates as high as 9.8MBit/sec (equals roughly to 4.4GB per hour). So, only chance is really to re-encode it with ReMPEG2 or TMPGEnc or split the movie to two DVD-5 discs (in case you're planning to backup the movie to DVD-R).
