With full disk copy in DVD2one you cannot choose to cut out unneeded audio tracks or subtitles.
However, couldn't I use DVDdecrypter to rip everything on the DVD except for the unneeded audio and subtitles (include the menues and special features) and then apply DVD2one to the ripped files?
In theory, would the final copy then include the menues, main movie, and special features, but not the extra languages or subtitles? Maybe this process could also be used to keep selected special features.
Has anyone tried this? Does it work? What happens if you select a menu option that links to something you removed (such as an audio stream or special feature track)?

The latest version of DVD2One noe allows you to strip audio streams from main title when doing Full Disk copy.

version 1.13 look on the dvd2one website, though i have had problems cutting out certain audio tracks using the full disk copy, like some menus not working or jumpy sound and video, better in my opinion to stick with full copy keeping everything or movie only selecting which audio you want to keep.

What about making a copy where you want to keep all the menus and extras and the widescreen version, but not the full screen? Is this possible with DVD2One?

No , FULL-DISK means everything as far as I know.
