Extracting subtitles from a mkv. file

I'm wondering how would one go about extracting subtitles from a mkv. file. It's an anime movie I would like to burn but I can't find a way to do it. Any help would be greatly appreciated.

Im also trien to put a MKV movie to a DVD-R
(Full Metal Alchemist Conqeuror of Shambala)

But I had no luck,

Especially when the movie has to be selected to play with the sub's
Im guessing that the subs are built in, so if you encode it to a DVD or something it might work if you select subtitle on the remote towards the DVD player.
But chances are this might not be true.

As far as I know mkv is one of those formats that make someone think why was it created.

Though Im trien to convert the mkv to dvd format
or AVI using WinAVI 7.1

Its an easy program to use but im let you know what I get, when it converts.

Trien to help out the best I can.

I've been successfull at convertin mkv to dvd with subtitles. my mkv file had .ass subtitle file and since i wanted to keep the special formating of this extension, I used VirtualDubMOd as a frame server to hard encode the subtitles to the resulting DVD video file. To extract the subtitles I used MKVextractGUI, to be used with MKVToolnix. This may not always be possible, especially if the video contained in the mkv shell is encoded in variable frame rate, but its worth a try. If you want selectable subtitles then all you have to do is extract them from the mkv file via MKVextractGUI then import them into our authorizing program. I hope this helps.
