I ripped a DVD (English speaking) several times and the resulting audio was either spanish or french. DVDShrink said there were only two unspecified default audio streams (spanish and french). On the standalone DVD player it was english. How do I find the english track?

I loaded the ifo file in ifoedit and found the same thing. Couldn't find the english track.

Try decrypting the DVD with DVD FAB, running it thorough VOBBLANKER, and then shrink on the files, it could be an encryption problem.
