Ive come across the movie Memento (which is a great movie if you havent seen it) except it is in Italian. Now i have the english track in mp3 format but i dont know how to put the english audio on the movie so it goes correctly...any help from anyone would be appreciated.

Try this
Open in VDUB MOD
http://prdownloads.sourceforge.net/virtualdubmod/VirtualDubMod_1_...
go to STREAMS > STREAM LIST and disable or mute the existing one. Then hit ADD and add the english mp3 file.
The go to VIDEO > DIRECT STREAM COPY and save it as AVI (from the file > save as avi)
If you video is in two parts make sure you join them 1st
