Just remember to set the video mode to PAL, considering you have a PAL console, just remember though, I think the screen will get cut off somewhere, but if your game has screen positioning, you can perfectly center it.

It also depends on your TV, the TV I used when I had swap magic supports both PAL and NTSC so I never had troubles with screen getting cut off. Best choice is to invest in a SCART cable though - but only if your TV supports it. It gives you the best quality and doesn't have problem with video modes
I've never tried a 2 disc game with swap magic, but I assume you should be able to use swap magic for loading the second disc... having said that, most games let you save before changing disc, so if that doesn't work, then save at the end of disc 1, reset YOUR ps2, then load the second disc with swap magic and continue from there
