So when I burn the dvds, I used DVD SHrink and I usually remove all audio except for the 5.1 sound to conserve space and get a better picture quality. Do I lose any audio when I play these on 2-channel DVDS players. Or if I don't have a 5.1 audio setup.

The AC3 5.1 usually downmixes to 2.1 on most systems so you shouldn't lose a thing. Make a backup of with both 2.1 and 5.1 and choose the 5.1 audio stream to see if your system is capable of down mixing.
