Simple question really, which format is smaller? Since I'm a fan of the 1 disc solution (cheap?) I'd rather with the smaller track if the movie length goes beyond 120 minutes.

I do know already through trial and error that with only a DTS track anybody playing that disc without a DTS enabled stereo system is SOL for hearing anything.

Exactly.

I have a Sony DVD Player that is DTS capable but some are not (like my sisters)

DTS is smaller but in DVD2One [if not doing a FULL-DISK back up] I always choose AC3 6CH (DolbyDigital)
All back ups are perfect quality sound : )

Hmm...

Well for myself DTS only is great, I like the format and it sounds fantastic plus my receiver does both standards. I'm not sure how it works with players though. A stand alone player that supports DTS would play the track fine even if the stereo itself (or *gasp* just a tv!) can't do DTS? I'm thinking it would but I never really looked into it.
