I have a PAL PS2. How can I tell which version it is and which version of Swap Magic to buy.

You can tell from the SCPH number on the rear of the console. Also, v1 - v8 consoles are the old style 'fat' PS2s, and v9 onwards are 'slims'.
Besides that, Swap Magic works with all PS2 versions anyway. Just buy a PAL Swap Magic set. Although I'd avoid the latest one - 3.8 Coder Edition, as it's been known to cause problems, so go for 3.6

ace1uk you got it wrong man, all v1-v11 are the old bulky systems, and v12 and onwards and slimlines.
