I try to load a game from a memory card that has 5,000 KB space left. The game will start, but not load the saved data. I have tried to copy it onto another memory card (new) but it still won't work. The console is 2 years old and has no configurations, mods or changes to it. It is still as is from the factory.
Is there anything I can do to gert the game back?
Or will I just have to start again?

When a save goes corrupt, there is no bringing it back. As far as how to prevent it....are you using an original Sony memcard? The aftermarket ones are known to corrupt data sometimes, but the Sony ones are pretty good.
I have a slimps2, no mod chips, it's original from the factory. I have the original codebreaker disk also. After loading codebreaker a couple times to play games, the ps2 console will not want to load codebreaker anymore. It shows the ps2 logo and then goes to a black screen. I have read on some threads that it has this problem on burnt cd's, but mine is original. Does anyone know why codebreaker wont load? (when/if it loads, the day1 file seems to freeze when I put my usb pendrive in).
Your laser lens is possibly dirty, or failing on the CD side.
Try cleaning it 1st. If that doesn't work, then you'll need to do some adjustments to the drive tray alignment, or laser focus alignment. Failing that, then the Pots may need adjustment. If still not working, then it'll never load a cd based game/app again, and the dvd side will fail eventually too.
