DVD library: Best method to=Rip files to hard drive. Organize by star's name. Play f/HardDrive ???

I have a TON of DVD videos I PURCHASED LEGALLY and I want to organize my collection.

There is an average of 1 chapter per DVD that I would like keep,
the rest I'd like to throw into storage.

I'd like to know the best software and process to utilize in order to do the following:

-Create a files on my hard drive based on "stars" name.
-Rip all of the scenes featuring a "star" into the "stars" file on my hard drive.
-View/Play the files from my hard drive with the ability to fast forward and rewind.
-Backup the ripped files to a DVD+R that I can view on my computer (hopefully any DVD player as well)

Any assistance would be greatly appreciated.
