Ripping unwanted tracks from a music DVD

Hello, I was wondering if there is a way to rip unwanted tracks from a music DVD to make it fit on one DVD-R? What software would I need to use to achieve this and not loose any picture/sound quality? I've tried DVD X copy but it copy the whole DVD to two DVD-R. Any Help is appreiated.
