Can a copy HDextreme or swap magic work on a slim, unmodded PS2, or are the original discs always needed?

You'll need an original Swap Magic disk, but everything else can be copied. PS2's have a funny method for verifying original disks that involves checking data on the inner ring of the disk; since you can't write to this inner ring on a dvd burner, there's no way to fool it. Original Swap Magic disks have this ring feature and are recognized as original PS2 disks, but copied Swap Magic disks do not. You can, however, boot a swap magic copy using a swap magic original, using the same method that you use for booting games.
