any of the top 3 (DMS4 Pro SE/Matrix Infinity/Crystal Chips) would be an acceptable choice, the DMS4 makes an EZI that is solderless but to the average Joe they arent't that easy to install :)

regardless of which one you go with on the V12 you'll need the laser fix.

there really is no "easiest to put in" mod chip
unless your are quite good with a soldering iron i would
have it installed by a professional, like teammodders.com
My personal choice is a DMS4 Pro SE
And yes, you will need a laser fix with a V12, but they run about $10 at the very most.
If you are in the US then check out Teammodders.com, you can send them your PS2 and they can install the chip and laser fix for you and ship it back. They also have install pictures in the PS2 forum so that you would see what kind of wiring is involved in installing
a mod chip.

The only other option is to pay more and get a DMS4 EZI Pro which is a solderless chip. The problem with solderless is you have to be careful when installing them as they can break easy. And they can shake loose over time and have to be looked at. PLus they cost about $10-$15 more than a soldered in type.

Where can I get a laser fix for my V12?

Also, my friend knows how to work a solder. I should try it with him. I don't want to spend much more money on the PS2. We just need a solder with a sharp point, right, as the mod chip has everything else?

most places will include a laser fix with the purchase of a chip. and while i don't in any way discredit your friend, most people who think they can solder 99% of the time screw up a PS2 installation. 90% of the repairs i do are from people who thought they could do the chip installation themselves and said 'I know how to solder pretty good' but when i got the console in for repair the connections looked like a solder turds globed on the boards.
