I am new at this too, but I got into DVD ripping recently for exactly this reason, although there are other benefits! Just need to follow bits of the excellent article in here about DVD-VCD ripping, because much of the tools you will need are mentioned and described there. Basically, you:
1: use SmartRipper to rip the chapters that you want after it has authenticated the DVD (not everything in the chain)
2:Use DVD2AVI (as described in article, except leave the 48-44.1 downmix, I found it is better quality and much faster to leave it at 48) to create two files, a .wav and a .d2v file.
OK you are nearly there. Download Nero (because I am assuming you want to burn this, but if you don't, download it anyway, it is great, free [for 30 days] and we can use the editor in it here.
3: Open Nero, use wizard to choose compile CD, then select CD, Audio etc and when you finish, find the .wav you created and drag it to the left (audio 1). Even though you are not necessarily going to use Nero to burn, it has a half decent audio editor, which allows you to fade, edit etc, right click on the file you just dragged, select audio editor and this will open audio editor with your file. Edit, cut and fiddle, till you find your bits in the (probably too large) .wav, crop (delete the bits either side you don't want) then save as .wav

Alright all you seniors, it may be cumbersome, but I have only been doing this for a couple of weeks and this method works for me and gets me used to the software for ripping/encoding/burning etc.
