VHS to DVD Capture Format

I need help. I've made DVD's from many "VIDEO_TS" files but am now trying to make DVD's of old VHS tapes of flattrack racing and duck hunting. I bought a Leadtek "WinFast PVR" card but have no idea which capture profile to use so that I can record to a DVD using Nero or Roxio 6. The default capture format profile is "MPEG-2 Good Quality". The other selections are (MPEG-1, MPEG-2 different quality; VCD; DVD NTSC; DVD PAL; WMV; AVI. Is the default ok to use and which selection in Nero/Roxio do I select for recording the hard drive file? Or would the DVD NTSC be better?
I may be a WIZ on scsi devices, but recording is a whole new field for this old %#$@*&%! Thanks for any advice. Dick
