How do I back up my DVDs without Closed Caption?

I am having a slight problem when I back up my DVDs. Here is my process of backing them up.

I backup the DVD to my harddrive using DVDshrink. When using DVDshrink, I reauthor the movie and just backup the main title without all of the menus and extras. I also use whatever size compression I need to make the data fit onto one DVD.

Next, I burn the backed up DVD from my PC to DVD using Nero 6. I use the DVD-Rom (UDF/ISO)option to burn the DVD. Every DVD I burn this way seems to work fine, but about half of the DVDs I burn play back with the closed caption option (where the sound works, but you also get the words across the bottom of the screen.). It's not in the TV or DVD player setup; I have elimated this as being the problem. The problem has something to do with my burning of the DVDs, but I can't seem to figure out what I'm doing to cause the closed caption to be turned on (there is no way to turn it off of the burned DVDs that it is on.). It doesn't seem to occur in no sense of pattern that would help to figure out what is causing this.

Has anyone else ran into this problem? Is there a way to backup my DVDs so that my backup DVDs don't have to playback so that you see words at the bottom of the TV screen?
