Wireless access in large rooms

I was wondering what would be the best way to set up a wireless internet access in a large room like an auditorium were you would have about 200 people at once and most of them with a laptop, vpn, internet, file sharing and all that stuff is hard to stop, how do you do so the access points don't get saturated, I know that if you change the channels in each access point to a unique frequency you solve the problem of each access point interfering to each other but how about if one group of people concentrates on one corner with 25 laptops and saturates one antena, how do you do it so the overflow goes automatically to the next access point so you don't have people getting drop or the whole acces point slowing down to a crawl with to many conections?
I don't need all the answers to my question, although it would be great, but if someone can point me to the right place where I can find this information it would be great.
