This is an example of the type of software I am looking for:

On superman Reeves was strung up in front of a blue screen and filmed. Then they took the blue screen out and put it in a video of a camera moving showing the sky. Ta Da, he's flying.

What program do I need for something like this?

Well if its still shots Photoshop will easily do the job... for video stuff you may want to look into Premier.
