I figure this is a often asked question but one i cant seem to find a answer to. I was wondering if softmodding a xbox allowed it to play backup'd copys of games. If so what else does softmodding allow you to do?

Yes, it does.
You can run Emulators, rip games to your harddrive, I think you can rip movies, the list goes on..
