Anybody know how publishers make the games actually playable on unmodded Ps2's and Xboxes and stuff like that?

combination of hardware security and software.

the disc itself is pressed and not burnt and starts at a specific LBA number.

also the software int he ps2 checks for ceretain things that need to be on the ps2 disc. ie high TOC.
